It’s always nice to know that there’s something sweet and healthy in your freezer which you can enjoy any time of the day, isn’t it? These minty Greek yogurt fruit popsicles are low-fat, with a good amount of protein and probiotics, and with a delectable and sophisticated (dare I say!) flavor due to the combination of mint and cinnamon. In addition, they’re so easy, even my 11 years old niece can make without any problem!

Just make sure that you use real yogurt (not the kind that thickens with gelatin) to get as many probiotics as possible. The yogurt is sweetened with some honey, while the fruit became a homemade low-sugar jam (but a low-sugar store-bought one is just as good!).  And if you have any friends or family members who can’t eat dairy, or you just want another healthy and delicious popsicle recipe in your arsenal, then you need to check these tahini and chocolate fudge popsicles!

These Greek yogurt fruit popsicles are healthy enough to be eaten every day especially if you follow a well-balanced diet. And their refreshing taste will certainly cool you off when the weather gets extra hot. You can even have them for breakfast especially if you add some granola in the mix (one or two tablespoons per cup are enough).

These little treats are inspired by a simple Greek dessert which is nothing more than strained yogurt sweetened with honey and served with crushed walnuts. The same ingredient combination inspired me to make this really fresh, creamy and AMAZINGLY delicious Greek yogurt, honey and white chocolate mousse cake which is something between a light cheesecake and a white chocolate mousse. It’s not a dessert you should eat every day, but it’s definitely something you should make on a special occasion 🙂

How to make low-sugar jam:

It’s easier than you think! You’ll just need 10 minutes, some of your favorite fruits and a bit of sugar (sugar, except the extra sweetness, helps to reduce the formation of crystals when the jam freezes).

Process the fruit in a food processor and pour the puree into a wide saucepan. Cook over high heat until it starts to thicken, about 4-5 minutes. Add the sugar and cook for another 3-4 minutes, or until the sugar is melted.

Not adding the sugar from the start helps the moisture of the fruit to evaporate more quickly and preserves the fresh taste of the jam.

Some notes/tips:

  • If you don’t like the seeds from the berries you can pass the pureed fruit through a sieve.
  • In this recipe a low-fat (2%) real Greek yogurt is used but you can also use a full-fat one.
  • This recipe works with any kind of fruit you like. Peaches, apricots, kiwi, pineapple, strawberries, cherries are great options.
  • Instead of swirling the fruit, you can blend everything in a blender or a food processor (much easier!)
  • Some added granola or nuts will provide texture and make these popsicles more filling.

Ingredients
  • 3 cups (750 grams) low-fat Greek yogurt (2%)
  • 1/3 to 1/2 cups (120 - 170 grams) honey, depending to taste
  • 3/4 teaspoons grated cinnamon
  • 6-7 large mint leaves, finely chopped
  • 1 teaspoon vanilla extract
  • 3/4 cups (200 grams) low-sugar jam of your choice (homemade or store-bought)

  • For the low-sugar jam:
  • 1 1/4 cups (200 grams) chopped fruit (red berries, peaches, apricots, pineapple, kiwi, etc.)
  • 1/4 cup (50 grams) sugar

  • 10 espresso paper cups, 3.4 ounces/100ml
  • 10 popsicle sticks
Instructions
  1. Make the low-sugar jam (skip this step if you use store-bought): Puree the fruit in a food processor and, optionally, pass it through a sieve to catch any seeds (especially if using berries). Pour the puree into a wide saucepan and cook over high heat until it starts to thicken, about 4-5 minutes. Add the sugar and cook for another 3-4 minutes, or until the sugar is melted. Let it cool.
  2. Make the yogurt mix: Transfer the yogurt, the honey, the cinnamon, the mint, and the vanilla in a large bowl and mix well.
  3. Make the popsicles: Divide half of the yogurt mixture into the paper cups, continue with the jam and finish with the rest of the yogurt mixture. Place one stick in the middle of each cup and make a swirl. Freeze for 4 hours or overnight.
  4. To unmold, peel off the paper cup or dip the cup briefly in a bowl filled with hot water.
  5. Eat!
Recipe Notes

Easier way: Mix all the ingredients (the jam also) in a food processor or blender until smooth and divide into cups. This method will produce one-color popsicles.
Start with one third of a cup honey, taste and adjust the sweetness by adding more to your liking.
You can also mix a couple tablespoons of granola or nuts for more filling popsicles.

    Greek yogurt is perfect to use in recipes such as this. It’s not only creamy, but also higher in protein than other yogurts. You can also make a simple frozen treat with Greek yogurt mixd with Greek honey and pureed, fresh fruit like strawberries or blueberries.
