When it starts to boil, reduce heat to low and simmer until almost all of the liquids have evaporated and a thick sauce has remained. Remove and discard the bay leaves, cinnamon, all spice and cloves (if you used whole cloves and all spice kernels).
Taste and adjust salt and pepper.
You can substitute 2 cups pureed tomatoes instead for the tomato paste and the water
