Make the low-sugar jam (skip this step if you use store-bought): Puree the fruit in a food processor and, optionally, pass it through a sieve to catch any seeds (especially if using berries). Pour the puree into a wide saucepan and cook over high heat until it starts to thicken, about 4-5 minutes. Add the sugar and cook for another 3-4 minutes, or until the sugar is melted. Let it cool.
Make the yogurt mix: Transfer the yogurt, the honey, the cinnamon, the mint, and the vanilla in a large bowl and mix well.
Make the popsicles: Divide half of the yogurt mixture into the paper cups, continue with the jam and finish with the rest of the yogurt mixture. Place one stick in the middle of each cup and make a swirl. Freeze for 4 hours or overnight.
To unmold, peel off the paper cup or dip the cup briefly in a bowl filled with hot water.
Eat!

Easier way: Mix all the ingredients (the jam also) in a food processor or blender until smooth and divide into cups. This method will produce one-color popsicles. Start with one third of a cup honey, taste and adjust the sweetness by adding more to your liking. You can also mix a couple tablespoons of granola or nuts for more filling popsicles.
