Shaved fennel, orange & ouzo salad

This shaved fennel and orange salad gets mixed up with some walnuts and then drizzled with an ouzo spiked dressing. Make it with any citrus fruit you like!

  • For the salad:
  • 2 fennel bulbs
  • 2 oranges, peeled
  • 1 cup arugula, chopped
  • 1 cup walnuts, chopped
  • 1 cup Parmigiano Reggiano flakes (omit this if you’re vegan)

  • For the dressing:
  • 5 tablespoons e.v. olive oil
  • 2 tablespoons balsamic vinegar
  • 1-2 tablespoons ouzo (start with 1 tablespoon)
  • Salt and pepper to taste


  1. Combine all the ingredients for the dressing in a shaker or blender and shake/blend until homogenized. Taste and add more ouzo if you like.
  2. Rinse and clean fennel bulbs, cut in half (lengthwise) and slice them finely. You can also use a mandolin for this.

    Cut the oranges into chunks.

  3. Combine all the ingredients for the salad in a large bowl, pour over the dressing and mix well.
  4. Eat!
