Crispy pistachio & chocolate chunk cookies

  • 2 cups all-purpose flour
  • 2/3 cups cornstarch
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup butter, room temperature
  • 1 cup icing sugar
  • 1 egg
  • 1 cup roasted pistachios, chopped
  • 1/2 cup chocolate chunks
  • A pinch of cinnamon
  • 1 teaspoon vanilla


  1. Preheat your oven to 350°F (175°C) and line a pan with baking paper.

  2. In a bowl mix the flour, cornstarch, baking powder, cinnamon and salt.

  3. In another bowl beat butter and sugar with an electric mixer until pale and very fluffy. Add the egg and vanilla beat until combined. Add the flour mixture and mix with a spatula. Add the nuts and the chocolate and mix until just combined.

  4. Forms balls the size of small walnuts and place them on the pan, leaving some space between them.

    Bake for 25 minutes or until golden brown and fragrant.

  5. Cool on a rack and store in an airtight container.
