A delicious pistachio and chocolate chunk cookie recipe! Crispy, airy and tender, these cookies keep for up to ten days when stored in an airtight container!
Preheat your oven to 350°F (175°C) and line a pan with baking paper.
In a bowl mix the flour, cornstarch, baking powder, cinnamon and salt.
In another bowl beat butter and sugar with an electric mixer until pale and very fluffy. Add the egg and vanilla beat until combined. Add the flour mixture and mix with a spatula. Add the nuts and the chocolate and mix until just combined.
Bake for 25 minutes or until golden brown and fragrant.
These cookies, if well stored, will keep for more than 10 days
