Cocooning chai

Black tea with warm spices and honey create the perfect chai for a cold weather

  • 8 cloves
  • 2 sticks of cinnamon about 3 inches (7 1/2 cm) long
  • 1 star anise
  • 1 mace
  • 6 dried rose buds
  • 2 teaspoons black tea
  • 1 teaspoon honey

  • Two strips of lemon peel optional
  • sugar to taste


  1. In a small pot put two cups of water and the cloves, cinnamon, star anise, mace, and rose buds.
  2. Bring to a boil, and simmer for one minute. Turn off the heat and let rest for two minutes. Add the black tea and honey, stir and let steep for one minute.

  3. Place one strip of lemon peel in each cup and some sugar (if you use). With a strainer, strain chai over the cups.

  4. Drink.
