  • 1/2 cup (110 grams) sugar
  • 1/2 teaspoon cinnamon
  • 2 teaspoons orange zest (or lemon zest)
  • 1/4 teaspoon fine salt
  • 1/4 cup plus 2 tablespoons (75 grams) olive oil
  • 1/4 cup plus 2 tablespoons (75 grams) butter, room temperature
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 2 cups (260 grams) all-purpose flour
  • 1 1/2 teaspoons (5 grams) baking powder


  • Melted chocolate, strawberry jam, icing sugar


  1. Transfer the sugar, the cinnamon, the zest, the salt, the olive oil, and the butter to a bowl and whisk until pale and fluffy. Add the egg and the vanilla and whisk until incorporated.
  2. Mix the flour with the baking powder and add it to the olive oil and butter mixture. Mix with a spatula just until the flour is absorbed.
  3. Let the dough rest, line your pan with baking paper, and preheat your oven to 356°F (180°C).
  4. Make the cookies and transfer them to the pan, leaving some space between them. Bake for about 20 minutes or until golden brown. Transfer to a rack to cool.
  5. Eat them plain, sandwich them with some strawberry jam, or decorate with melted chocolate.

Recipe Notes

Measure the butter and olive oil easily: Use a measuring cup of 3/4 cups size, fill the half with butter (just eyeball it) and the rest with olive oil.
