Ingredients

  • 4 persian cucumbers thinly sliced
  • 1/4 - 1/2 small red onion thinly sliced
  • 1 tablespoon capers
  • 1 tablespoon good quallity red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • pinch of salt

Instructions

  1. Transfer all of the ingredients to a bowl and mix well. Taste and adjust the salt and the vinegar according to your taste.
  2. Cover the bowl with cling film or a lid and refrigerate for 15-20 minutes for the flavors to develop.
  3. Serve.

Recipe Notes

Instead of capers you can use sliced and pitted Kalamata olives.

If your red wine vinegar is not very strong you may need to add more. Taste and adjust according to your preference.

If you want, you can add some feta cheese to make things more interesting.
