  • 2 medium Persian cucumbers, sliced
  • 2 medium tomatoes, chopped
  • 1/2 red onion, thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt


  1. Transfer the cucumbers, the tomatoes and the onion to a salad bowl.
  2. Drizzle with the olive oil and the vinegar.
  3. Sprinkle with the oregano and the salt.
  4. Mix well with a spoon, taste and adjust the vinegar and the salt. Serve.

Recipe Notes

  • I like to keep the cucumbers with their skin, but you can also peel them.
  • More things you can add: olives, capers, green onions, red or green chopped bell pepper, fresh purslane (duckweed), broken rusks, avocado.
