Transfer all the ingredients for the salad to a large salad bowl.
Transfer all the dressing ingredients to a jar, close tightly with a lid and shake vigorously to combine.You can also transfer them to a small bowl and whisk with a fork. For large quantities, use a blender.
Drizzle the dressing over the salad bowl and toss to combine.Serve immediately.

For the salad in the pictures I used a mix of the following leafy greens: Romaine lettuce, iceberg lettuce, red coral lettuce (Lollo Rosa), green coral lettuce (Lollo Bionda) and arugula.Slithered almonds can also be used instead of coarsely chopped almonds.Parmesan shavings are easy to find, but you can also make them yourself from a Parmesan wedge using a potato peeler, a box grater (the thin slice side) or a sharp knife.The dressing is on the sweet side. For a tangier dressing, start with 2-3 tablespoons honey, taste and add more according to your preference.
