14oz(400 grams) white chocolatereal white chocolate, not chocolate melts
¾ cups plus 1 tablespoon (200 grams) heavy cream, 35% fat
2teaspoonsbrandy, optional
A pinch of salt
½teaspooncinnamon
2cupsabout 200 grams finely crashed graham crackers or butter cookies
½ to 1cupshredded coconut
25gramsdark chocolate or 1 teaspoon cocoa
Colored sugarpaste for decoration
Instructions
Melt the white chocolate with cream in the microwaves or in a double boiler. Add the vanilla, the brandy, the salt and stir to combine. Mix cookie crumbs with cinnamon and add to the chocolate mixture.
Transfer ¼ cup of the white chocolate mixture in a separate bowl, melt the dark chocolate in the microwaves or in a double boiler, and mix them together. (Or you can just mix the cocoa with the white chocolate mixture)
Refrigerate the two mixtures for 1-2 hours until firm.
Put the shredded coconut in a plate, form 10 walnut sized balls with the white chocolate mixture and cover them with the coconut.Form 10 smaller balls for the heads and cover them also with the coconut.Place one small ball over the larger one and secure with a toothpick. Let the toothpick protrude a little, to secure the hats.
With the dark chocolate mixture, form little balls the size of a large chickpea, flatten them out to form small discs, and place them over the heads.
Then, make a cylinder about half an inch in diameter, and cut 1 inch pieces. Place them on top of the discs to form the hats. If the chocolate mixture becomes too soft, place it in the fridge for 10 minutes to harden.
Make the noses and eyes with black and yellow sugar paste. Poke holes with a toothpick and place them inside the holes.NOTE: Before serving, inform everyone that there's a toothpick inside the snowman, and also remove the toothpick yourself before treating small children.
Notes
Keep refrigerated for 4-5 days If you have some white sprinkles, you can use them instead of shredded coconut. You may even use some icing sugar to coat them, but it may become soggy after a while, since sugar draws moisture The snowmen are secured with toothpicks. Remember to tell your guests to remove them before eating!!!
