These Xmas white chocolate truffle snowmen is a fun and easy treat for the holidays!

Does anybody else count the days until Christmas ???
Every time this year, I usually start to count how many days are left till the 25th. But this year I almost didn’t realize that December was already here! If it weren’t for the decorations at the stores and a gathering of friends who we all got together to decorate the Christmas tree in anothers friend’s house, then I wouldn’t have noticed… So, with Xmas being so close, I thought that a recipe for some white chocolate truffle snowmen would be the perfect thing to share on today’s post. This recipe is very similar to my favorite dark chocolate truffles recipe, with the difference that white chocolate is used here, because black snowmen isn’t something you come across very often… Each snowman is covered with some shredded coconut for prettier presentation, but if you have some white sprinkles you can use that also.

Some of the snowmen are dressed with little scarves because I happened to have some sugarpaste left from a birthday cake I made a while ago.  Anyway, the scarves are totally optional, but you will probably need some sugarpaste for the noses and the eyes.

I really enjoyed photographing these snowmen, because I got to play a little with them and had a lot of fun! First, I set the three of them onto the plate and started decorating it with a green fabric, some coconut as snow and some Christmas ornaments. Then the prettier snowman, the one on the left, seemed a little snob and he turned his back on the other two!

Then, the other two, as a respond, came closer to each other like good friends. I guess it was their way of saying “we don’t need you Mr. Snob, we have each other and we‘re happy!”

After that, the left snowman seemed a little skeptical and ready to reconsider his behavior (can you see the bewilderment in his eyes?). And then, out of the blue, two more white truffle snowmen showed up in the back. They had no scarves and seemed a bit jealous of the other three!!!

Some notes:
If you have some white sprinkles, you can use them instead of shredded coconut. You may even use some icing sugar to coat them, but it may become soggy after a while, since sugar draws moisture.
The snowmen are secured with toothpicks. Remember to tell your guests to remove them before eating!!!

A fun and easy treat for the holidays! These truffle snowmen will become a favorite, either for your children or for your guests!

Servings: 10 -12 snowmen
Ingredients
  • 14 oz (400 grams) white chocolate
  • 3/4 cups plus 1 tablespoon (200 grams) heavy cream, 35% fat
  • 2 teaspoons vanilla
  • 2 teaspoons brandy, optional
  • A pinch of salt
  • 1/2 teaspoon cinnamon
  • 2 cups about 200 grams finely crashed graham crackers or butter cookies
  • 1/2 to 1 cup shredded coconut
  • 25 grams dark chocolate or 1 teaspoon cocoa
  • Colored sugarpaste for decoration
Instructions
  1. Melt the white chocolate with cream in the microwaves or in a double boiler. Add the vanilla, the brandy, the salt and stir to combine. Mix cookie crumbs with cinnamon and add to the chocolate mixture.

  2. Transfer 1/4 cup of the white chocolate mixture in a separate bowl, melt the dark chocolate in the microwaves or in a double boiler, and mix them together. (Or you can just mix the cocoa with the white chocolate mixture)
  3. Refrigerate the two mixtures for 1-2 hours until firm.
  4. Put the shredded coconut in a plate, form walnut sized balls with the white chocolate mixture and cover them with the coconut.

    Form smaller balls for the heads and cover them also with the coconut.

    Place one small ball over the larger one and secure with a toothpick. Let the toothpick protrude a little, to secure the hats.

  5. With the dark chocolate mixture, form little balls the size of a large chickpea, flatten them out to form small discs, and place them over the heads.
  6. Then, make a cylinder about half an inch in diameter, and cut 1 inch pieces. Place them on top of the discs to form the hats. If the chocolate mixture becomes too soft, place it in the fridge for 10 minutes to harden.
  7. Make the noses and eyes with black and yellow sugarpaste. Poke holes with a toothpick and place them inside the holes.
  8. Eat
