Craving something sweet and utterly comforting, but don’t want to spend hours in the kitchen? This Lazy Bougatsa is a simplified take on the beloved Greek custard dessert. It delivers all the warm, nostalgic flavors of the traditional Greek pastry with just a handful of ingredients and zero fuss.
Preheat your oven to 390°F (200°C) and lightly brush the baking dish with butter or olive oil.
Transfer each sheet of phyllo dough to the baking dish, gently folding it into loose ruffles, like you’re making a paper fan. Continue with the rest of the phyllo until the whole pan is filled with crinkly folds. Brush the ruffled phyllo generously with butter and bake for 20 minutes, or until golden brown and crisp.
In the meantime transfer the eggs, salt, sweetened condensed milk, milk, and vanilla to a bowl and whisk until well combined.
Take the pan out of the oven and lower the temperature to 320°F (160°C).Pour the milk mixture over the baked phyllo and shake gently to distribute evenly.
Return to the oven and bake for 15-20 minutes or until just set (you don’t want to turn it into an omelet).Let it cool for 10 minutes and sprinkle with confectioner’s sugar and cinnamon. Serve warm.

Notes
Note #1: 1 package phyllo dough is 14-16 oz (400-450 grams). If you want to use 1 standard package of phyllo you'll have to double the recipe. Otherwise, use half of the phyllo and store the other half in the freezer.
