    Lazy Bougatsa: No-fuss custard pie with phyllo

    Craving something sweet and utterly comforting, but don't want to spend hours in the kitchen? This Lazy Bougatsa is a simplified take on the beloved Greek custard dessert. It delivers all the warm, nostalgic flavors of the traditional Greek pastry with just a handful of ingredients and zero fuss.

    With just phyllo and a handful of ingredients, you'll whip up a golden, crackling Greek custard pie that tastes like you spent all afternoon making it. This sweet twist on "patsavouropita" starts by baking scrunched-up phyllo until golden, then pouring over a creamy milk-and-egg mixture and baking again until just set. It's the kind of Greek dessert that's perfect for lazy weekends, last-minute guests, or whenever your sweet tooth needs something cozy and nostalgic.

    I grew up in Crete, where Greek pastry wasn't just dessert, it was tradition. I still remember holding warm bougatsa wrapped in thin paper, the sweet custard nearly spilling out, cinnamon clinging to my fingertips. But today, with busy lives and limited time, we need recipes that keep the flavor but skip the fuss. That's where this Lazy Bougatsa comes in. Unfussy and deeply satisfying. No need for perfect layering or brushing each phyllo sheet with butter like in classic bougatsa.

    📋 Ingredient notes

    To make this recipe you'll need the following ingredients:

    Greek custard pie ingredients.

    Phyllo pastry: Also known as filo. If you have any scraps in the freezer from other recipes. this is a great chance to use them, since you don't have to worry about the phyllo tearing apart.

    Butter: It should be melted. I have also made this dessert with olive oil a lot of times and it's just as good.

    Milk: Whole milk or skimmed milk will work fine.

    For a dairy free option, use sweetened condensed coconut milk and a plant based milk.

    👨‍🍳  Expert Tips

    ✅ Don't compress the phyllo in the baking dish. Make sure to ruffle the sheets of phyllo pastry and fold them into messy, wavy shapes that trap air inside. This creates lots of crunchy, golden edges when baked and adds texture and volume to the pie. It also leaves room for the custard to penetrate the gaps. 

    ✏️  This style is typical in Greek recipes like patsavouropita (which means "rag pie").

    Equipment

    • 1 12x8 inches (30x20 cm) rectangular baking pan or a 10-inch (25cm) in diameter round pan.

    Ingredients
     

    • ¼ cup (54 g) melted butter (or olive oil)
    • ½ package (200 g) phyllo sheets (see note#1.)
    • 2 large eggs
    • 1 pinch of salt
    • 14 oz (400 g) sweetened condensed milk
    • 1 cup (240 g) whole milk
    • 1 tablespoon vanilla extract
    • Icing sugar for serving
    • Cinnamon for serving

    Instructions
     

    • Preheat your oven to 390°F (200°C) and lightly brush the baking dish with butter or olive oil.

    • Transfer each sheet of phyllo dough to the baking dish, gently folding it into loose ruffles, like you're making a paper fan. Continue with the rest of the phyllo until the whole pan is filled with crinkly folds. Brush the ruffled phyllo generously with butter and bake for 20 minutes, or until golden brown and crisp.

    • In the meantime transfer the eggs, salt, sweetened condensed milk, milk, and vanilla to a bowl and whisk until well combined.

    • Take the pan out of the oven and lower the temperature to 320°F (160°C).
      Pour the milk mixture over the baked phyllo and shake gently to distribute evenly.

    • Return to the oven and bake for 15-20 minutes or until just set (you don't want to turn it into an omelet).
      Let it cool for 10 minutes and sprinkle with confectioner's sugar and cinnamon. Serve warm.

    Notes

    Note #1: 1 package phyllo dough is 14-16 oz (400-450 grams). If you want to use 1 standard package of phyllo you'll have to double the recipe. Otherwise, use half of the phyllo and store the other half in the freezer.

      you want the phyllo to be all crinkly?! this sounds like the perfect recipe for me, then (i always am wrestling around with phyllo when i use it!). and all that sweetened condensed milk sounds so tasty in here (:
