📋 Ingredient notes
To make this recipe you'll need the following ingredients:

Phyllo pastry: Also known as filo. If you have any scraps in the freezer from other recipes. this is a great chance to use them, since you don't have to worry about the phyllo tearing apart.
Butter: It should be melted. I have also made this dessert with olive oil a lot of times and it's just as good.
Milk: Whole milk or skimmed milk will work fine.
For a dairy free option, use sweetened condensed coconut milk and a plant based milk.

✅ Don't compress the phyllo in the baking dish. Make sure to ruffle the sheets of phyllo pastry and fold them into messy, wavy shapes that trap air inside. This creates lots of crunchy, golden edges when baked and adds texture and volume to the pie. It also leaves room for the custard to penetrate the gaps.

Lazy Bougatsa: No-fuss custard pie with phyllo
Equipment
- 1 12x8 inches (30x20 cm) rectangular baking pan or a 10-inch (25cm) in diameter round pan.
Ingredients
- ¼ cup (54 g) melted butter (or olive oil)
- ½ package (200 g) phyllo sheets (see note#1.)
- 2 large eggs
- 1 pinch of salt
- 14 oz (400 g) sweetened condensed milk
- 1 cup (240 g) whole milk
- 1 tablespoon vanilla extract
- Icing sugar for serving
- Cinnamon for serving
Instructions
- Preheat your oven to 390°F (200°C) and lightly brush the baking dish with butter or olive oil.

- Transfer each sheet of phyllo dough to the baking dish, gently folding it into loose ruffles, like you're making a paper fan. Continue with the rest of the phyllo until the whole pan is filled with crinkly folds. Brush the ruffled phyllo generously with butter and bake for 20 minutes, or until golden brown and crisp.

- In the meantime transfer the eggs, salt, sweetened condensed milk, milk, and vanilla to a bowl and whisk until well combined.

- Take the pan out of the oven and lower the temperature to 320°F (160°C).Pour the milk mixture over the baked phyllo and shake gently to distribute evenly.

- Return to the oven and bake for 15-20 minutes or until just set (you don't want to turn it into an omelet).Let it cool for 10 minutes and sprinkle with confectioner's sugar and cinnamon. Serve warm.
