I find that Mediterranean and Mexican cuisine share some similarities, so I had to make a Mediterranean chili con carne which is so easy and simple to make and yet so flavorful!
You could also call it Greek chili, and if the Kalamata olives, the oregano and the Greek yogurt don't make it Greek enough, then just add some crumbled feta cheese as topping. It pairs extremely well!
Most of the times I eat it with brown rice, quinoa or homemade pita bread but for a low carb dish you can also serve it with steamed green beans or even peas.

For this healthy Mediterranean turkey chili recipe you'll need the following simple ingredients:
- Ground turkey breast
- olive oil
- Onion (can be fresh or onion powder)
- garlic clove (can be fresh or onion powder)
- Chicken broth (or water with 1 chicken bouillon added)
- Pureed tomatoes
- Green bell pepper
- Red bell pepper
- Red kidney beans (you can also use black beans)
- Sweet corn
- Parsley
- Kalamata olives
- chili seasoning (homemade or store bought)

For the homemade chili seasoning:
- Sweet paprika
- Smoked paprika (can probably replace this with a few drops of liquid smoke but I've never tried it)
- Ground cumin
- Dried oregano
- Freshly grated black pepper
Optional: If you want your chili spicy, add some cayenne pepper or Tabasco sauce.
✏️ Top Tip! Spices can have a stronger or weaker flavor depending on their origin, age and storage conditions (especially cumin can lose its smell very fast). Taste your chili halfway through cooking and add more seasoning if needed.

1. Sauté the ground turkey over high heat until well browned.
2. Add the chili powder, the onion, and the garlic and stir until the onion is soft.
3. Add the chicken stock, the tomatoes, the bell peppers, the beans and the olives and simmer until the chili remains with a thick sauce.
4. Just before the end, add the sweet corn and the parsley.
✏️ How do you thicken turkey chili?
The best way to thicken chili is to let it simmer over low heat until some of the liquid is evaporated. If you want it extra thick, all you have to do is mix some corn starch with cold water and add this mixture to the chili while it is still simmering. Stir well until the corn starch coagulates and forms a thick sauce.

How to make this recipe in the slow cooker
Reduce the chicken broth to half and brown the turkey and the onions before adding them to the slow cooker with the rest of the ingredients. Cook the chili on high for 3-4 hours or on low for 6-7 hours.

Simple Turkey Chili Recipe Mediterranean-style
Ingredients
- 2 tablespoons olive oil
- 1 pound (450 g) turkey breast, (ground)
- 1 large onion (chopped, see note #2)
- 1 garlic clove (minced, see note #2)
- 1 ¼ cups (300 g) chicken broth (or water with 1 chicken bouillon)
- 14 oz (400 g) can tomatoes (pureed)
- ½ green bell pepper (chopped)
- 1 red bell pepper (chopped)
- ½ cup (60 g) Kalamata olives (pitted and sliced)
- 14 oz (400 g) can red kidney beans (rinsed and drained)
- ½ teaspoon salt
- ½ cup (70 g) sweet corn (fresh or frozen. Double this if you love sweet corn)
- ½ cup fresh parsley (chopped)
For the homemade chili powder:
- 2 teaspoons sweet paprika (see note #3)
- 1 teaspoon smoked paprika
- ½ teaspoon cumin (double this if it's not fresh)
- 1 ½ teaspoon dried oregano
- ¼ teaspoon freshly grated black pepper
For the chili thickener (optional)
- 3 tablespoons corn starch
- ¼ cup cold water
For the toppings:
- Greek yogurt, chopped green onions or chives, red pepper flakes
Instructions
- Heat a large pot over high heat and add the olive oil and the ground turkey. Spread the meat evenly on the bottom of the pot and let it brown well without stirring (this develops flavor). Once the part of the ground turkey that touches the bottom of the pot is brown, start stirring with a wooden spoon. Press the lumps to break them and cook until all the juices evaporate.

- Add the chili powder and stir for 1 minute, then add the onion and stir until it softens and looks glossy (about 3-4 minutes). Add the garlic and stir for 1 more minute.

- Add the chicken broth, the tomatoes, the bell peppers, the olives, the beans and the salt. Bring to a boil, cover the pot with a lid and reduce the heat to a gentle simmer.Cook for 30 minutes, then remove the lid and cook for 15 more minutes or until the turkey chili is left with a thick sauce (see note #4).Taste your chili halfway through cooking and add more salt and seasonings if needed.

- Add the corn and the parsley and cook for another 2-3 minutes.If you want your chili thicker, mix the corn starch with the cold water in a cup and add half of this mixture to the pot. Stir the chili and let it come to a boil. If the sauce is not thick enough repeat this process with the rest of the corn starch mixture.

- Serve with the side of your choice and add the Greek yogurt, green onions and red pepper flakes on top.

Notes
- Brown the turkey and the onions before adding them to the slow cooker with the rest of the ingredients and also reduce the chicken broth in half.
- Cook the chili on high for 3-4 hours or on low for 6-7 hours.

Hi! Unfortunately I can’t say for sure because I don’t have a crockpot, but I’ve seen other similar recipes that can be prepared in a crockpot so I would try it. Many of them instruct cooking on low for 6-8 hours. Hope that helps!

i would like to know how much makes 1 serving. The recipe says makes 4 servings,. When I add up the ingredients, I come up with about 8 - 9 cups of ingredients. Is one serving about 2 cups? That seems like a lot!
