    📋 Greek Yogurt Marinade Ingredients

    For this simple chicken marinade with Greek yogurt you'll need the following ingredients:

    Chicken. Any part of the chicken will do. Today I'm using boneless skinless chicken breasts. Chicken thighs or drumsticks will work even better, and the higher fat content will add flavor when grilled.

    Greek yogurt: Unsweetened and strained. I use 2% fat but whole Greek yogurt will be tastier. If you don't have Greek yogurt you can use plain regular yogurt. Also check the 19 best Greek yogurt substitutes and how to use them.

    Spices: Smoked paprika and ground cumin are my favorite. You can also add allspice.

    Herbs: Dried thyme pairs exceptionally with the rest of the ingredients but dried oregano will also do.

    Onion powder and Garlic powder: I suggest using dried powder because the taste penetrate the chicken better, and also it's a better option if you want to use it as a sauce.

    White miso paste: This is optional, and its not normally used in Greek style chicken recipes, but if you have it, it will add a savory note that is hard to find elsewhere. If you don't have miso paste try replacing it with a couple tablespoons of soy sauce.

    🔪 How to Make Chicken Marinade

    1. Mix the Marinade: In a large bowl combine the yogurt with the rest of the marinade ingredients.

    ✏️ If using miso paste, first mix it with a tablespoon of the yogurt to soften it and help it dissolve better.

    2. Prevent Cross-Contamination 🚫
    Use a separate cutting board for raw chicken and wash it thoroughly with soap and warm water after each use-don't use the same one for veggies or other foods.
    Wash your hands with soap and warm water for at least 20 seconds before and after touching raw chicken.
    Never rinse raw chicken! It spreads bacteria around your sink and counters.
    3. Marinate Safely 🥣
    Always marinate in the fridge, never at room temperature.

    Ingredients
     

    For the chicken:

    • 2 pounds (900 g) chicken breast boneless (skinless - see note#1)
    • 1 ½ teaspoon fine salt (or adjust to your liking)

    For the Greek Yogurt Marinade:

    • ⅔ cup (180 g) Greek plain yogurt (whole or 2% fat)
    • 2 Tablespoons (24 g) extra virgin olive oil
    • 1 Tablespoon dried thyme or oregano
    • 1 Tablespoon smoked paprika
    • 1 teaspoon cumin (ground)
    • 1 teaspoon onion powder
    • ½ teaspoon garlic powder (double this for stronger garlic flavor)
    • 1 teaspoon white miso paste (or pinch of salt see note#2)
    • ¼ cup (60 g) lemon juice (freshly squeezed)

    Instructions
     

    • In a large bowl combine the Greek yogurt with the olive oil, the thyme, the smoked paprika, the cumin, the onion powder, the garlic powder and the miso paste (see note #2). Mix well and reserve a few spoonfuls in a separate small bowl to use as a sauce - if the reserved sauce is too thick add a splash of water.
      Then, add the lemon juice to the bowl with the marinade and mix again.

    • Place the chicken on a clean cutting board and sprinkle with salt.
      👉 If using chicken breasts, place them between two sheets of parchment paper and pound gently with a rolling pin or another heavy object to even out the thickness.

    • Add the chicken to the marinade, and mix well making sure each piece is fully coated. Cover and refrigerate for at least 60 minutes (or overnight for maximum flavor).

    Note#1: You can also use the same weight chicken thighs or drumsticks depending on your preference.
    Note #2: If using miso paste, first mix it with a tablespoon of the yogurt to soften it and help it dissolve better.

    ✏️ Please note that cooking times are an estimate because they depend on the size of the chicken pieces. An instant read thermometer is your best option to determine doneness.

    Air fry Instructions:

    🔥 Set your air fryer to 375°F (190°C) for all cuts.
    🔹 Chicken Breasts: Pound to even thickness for the best results, Cook Time 18-22 minutes, flip halfway through (around 10 minutes), internal temp should reach 165°F (75°C) at the thickest part.
    🔹 Chicken Thighs: Boneless→ Cook Time 14-16 minutes, Bone-In→ 22-25 minutes, flip halfway through, internal temp should reach 175°F (80°C).
    🔹 Chicken Drumsticks: Cook Time 25-28 minutes, flip halfway through for even crispiness, internal temp should reach 175°F (80°C) near the bone.

    Grilling Instructions:

    🔥 Preheat your grill to medium-high heat for all cuts and oil the grill grates to prevent sticking.
    🔹 Chicken Breasts: Pound to even thickness for the best results, Grill Time 12-16 minutes, flip halfway through (around 8 minutes), internal temp should reach 165°F (75°C) at the thickest part.
    🔹 Chicken Thighs: Boneless→ Grill Time 10-14 minutes, Bone-In→ 16-20 minutes, flip halfway through, internal temp should reach 175°F (80°C). For extra crispy skin, grill with the skin side down first.
    🔹 Chicken Drumsticks: Grill Time 25-30 minutes, flip every 7 minutes, internal temp should reach 175°F (80°C) near the bone.

    Baking Instructions:

    🔥 Preheat your oven to 400°F (200°C) for all cuts.
    🔹 Chicken Breasts: Pound to even thickness for the best results, Baking Time 20-25 minutes, no need to flip, internal temp should reach 165°F (75°C) at the thickest part.
    🔹 Chicken Thighs: Boneless→ Baking Time 20-25 minutes, Bone-In→ 35-40 minutes, flip halfway through, internal temp should reach 175°F (80°C).
    🔹 Chicken Drumsticks: Baking Time 35-40 minutes, flip halfway through, internal temp should reach 175°F (80°C) near the bone. For crispier skin, bake on a wire rack over a baking sheet to allow air circulation .
