📋 Greek Yogurt Marinade Ingredients
For this simple chicken marinade with Greek yogurt you'll need the following ingredients:

Chicken. Any part of the chicken will do. Today I'm using boneless skinless chicken breasts. Chicken thighs or drumsticks will work even better, and the higher fat content will add flavor when grilled.
Greek yogurt: Unsweetened and strained. I use 2% fat but whole Greek yogurt will be tastier. If you don't have Greek yogurt you can use plain regular yogurt. Also check the 19 best Greek yogurt substitutes and how to use them.
Spices: Smoked paprika and ground cumin are my favorite. You can also add allspice.
Herbs: Dried thyme pairs exceptionally with the rest of the ingredients but dried oregano will also do.
Onion powder and Garlic powder: I suggest using dried powder because the taste penetrate the chicken better, and also it's a better option if you want to use it as a sauce.
White miso paste: This is optional, and its not normally used in Greek style chicken recipes, but if you have it, it will add a savory note that is hard to find elsewhere. If you don't have miso paste try replacing it with a couple tablespoons of soy sauce.
🔪 How to Make Chicken Marinade
Follow this easy step-by-step guide for how to make the best Greek yogurt marinated chicken. For the detailed steps with photos, please see the recipe card ⬇️ at the end of this post.
1. Mix the Marinade: In a large bowl combine the yogurt with the rest of the marinade ingredients.
✏️ If using miso paste, first mix it with a tablespoon of the yogurt to soften it and help it dissolve better.
✏️ Reserve a few spoonfuls of the marinade before adding the raw chicken.
2. Salt the chicken. If you use chicken breasts, place them between two sheets of parchment paper and pound gently with a rolling pin or another heavy object to even out the thickness.
3. Marinate the Chicken: Add your chicken to the marinade, making sure each piece is fully coated. Cover and refrigerate for at least 60 minutes (or overnight for maximum flavor).
4. Cook It Your Way: Whether you cook it in the air fryer, grill it, or bake it in the oven, this Grecian chicken marinade ensures your chicken comes out perfectly every time.
Serve it up with warm homemade pita bread, fresh cucumber slices or a simple cucumber salad, and a side of your choice, and you've got a Mediterranean feast that'll have everyone asking for seconds.

FAQ
You can marinate chicken breasts in a Greek yogurt marinade for anywhere from 30 minutes to 24 hours.
Timing Breakdown:
✅ 30 minutes to 2 hours: Enough time to infuse flavor and slightly tenderize the chicken. Perfect for a quick meal.
✅ 4 to 8 hours: Ideal balance-deep flavor penetration without over-marinating.
✅ 12 to 24 hours: Maximum tenderness and flavor. Best for meal prep or next-day cooking.
Important Tips:
Don't go beyond 24 hours. The acidity in the yogurt can start breaking down the chicken too much, making it mushy.
Always refrigerate while marinating to keep the chicken fresh and safe.
Pat dry before cooking for better browning and caramelization.
Handling raw chicken safely is crucial to prevent cross-contamination and food borne illnesses like salmonella. Here are some essential safe handling instructions:
1. Keep It Cold ❄️
Always store raw chicken in the coldest part of your fridge (at or below 40°F/4°C).
If not using within 1-2 days, freeze it in an airtight container for up to 9 months.
2. Prevent Cross-Contamination 🚫
Use a separate cutting board for raw chicken and wash it thoroughly with soap and warm water after each use-don't use the same one for veggies or other foods.
Wash your hands with soap and warm water for at least 20 seconds before and after touching raw chicken.
Never rinse raw chicken! It spreads bacteria around your sink and counters.
3. Marinate Safely 🥣
Always marinate in the fridge, never at room temperature.
If using some marinade as a sauce, set aside a portion before adding the raw chicken.
Never reuse marinade that's touched raw chicken.
4. Cook to the Right Temperature 🌡️
Chicken is safe to eat at 165°F (75°C)-use a meat thermometer to check.
Let it rest for 5 minutes before slicing to keep it juicy.
5. Clean Up Properly 🧼
Sanitize countertops, cutting boards, and utensils with hot, soapy water or a food-safe disinfectant.
Wash dishcloths and sponges regularly-they can harbor bacteria from raw chicken.
