    If you've ever wanted easy homemade bread without yeast that's healthy and actually tastes good, this is it.

    This flatbread recipe with yogurt gives you everything people want from traditional Greek flatbread, without the long process. The Greek yogurt keeps the dough tender and flexible while adding a subtle tangy flavor that makes these feel closer to authentic greek pita bread than many yeast-based versions.

    ✏️ I prefer making this no yeast pita bread with whole wheat flour because it's healthier, but I also make it with regular flour and it turns out just as good.

    Just mix the yogurt and flour, let it rest for a while, and cook the dough onto a hot pan. This yogurt pita bread feels suspiciously easy the first time you make it, but once you do, it becomes hard to justify buying store-bought flat bread again.

    📋 Ingredient notes

    To make this Greek yogurt flat bread recipe you'll need the following simple ingredients:

    Self raising whole wheat flour. If you can't find self raising whole wheat flour, you can make your own with regular whole wheat flour and baking powder. I give you more info in the recipe card below.

    👉 You can also use regular self raising flour (not whole wheat).

    Greek yogurt: Greek yogurt is strained so it's thicker, with more protein. I suggest using whole fat or reduced fat plain Greek yogurt, without flavorings, sweeteners, thickeners or any other additives. It should contain only milk and live cultures.

    Salt: Many brands with self-raising flour already contain salt, so check the packaging and omit the salt if necessary.

    Olive oil: You'll need some oil to grease the skillet (any vegetable oil will do, but Greeks prefer olive oil). I also like to add 1-2 tablespoons of extra virgin olive oil to the dough because it makes the flatbread more tender and tasty (but this is optional).

    ✏️ This recipe is actually very forgiving. Meaning, you can use regular yogurt instead of Greek (strained) yogurt or you can use regular self raising flour instead of whole wheat flour. If the dough is sticky, just add more flour until you get the right texture. The result may not be exactly the same, but it will still turn out pretty good!

    Ingredients
     

    • 1 ½ cups (360 g) plain Greek yogurt (see note#1)
    • 1 ¼ teaspoons (8 g) fine salt (see note#2)
    • 1 tablespoon extra virgin olive oil (optional, plus extra for the skillet)
    • 2 ½ cups (300 g) self raising whole wheat flour (see note#3)

    Instructions
     

    • In a large bowl, mix the Greek yogurt, salt and olive oil (if using). Then add the flour.
      👉 If using plain all purpose flour, also add in the baking powder.
      👉 You can also do this in the bowl of your stand mixer using the dough attachment.

    • Mix well with a wooden spoon until you get one rough ball. Then, transfer the dough to a clean lightly floured surface and knead with your hands until you get a smooth ball (or let the stand mixer do all the work).
      👉 If it's too wet, sprinkle lightly with flour as needed and continue kneading until the dough is pliable and not sticky.

    • Divide the dough into 2.8 oz (80 grams) pieces and roll them into balls (this is 8 balls for the basic recipe) and let them rest for 20 minutes.
      👉 For larger or thicker flatbread make 4.2 oz (120 grams) balls.

    • Lightly dust a flat surface with flour and using the palm of your hands flatten the dough to create a disc approximately 6 inches (15 cm). If the dough sticks to the surface just sprinkle with extra flour.
      👉 You can also use a rolling pin to roll the discs.

    • Heat a heavy duty pan or cast iron skillet over medium-high heat and brush with olive oil. Add one disc and cook for 2-3 minutes until you start to see bubbles appear on the surface. Pierce them with a fork for even cooking. Lift one of the corners and check for brown spots. Flip and continue cooking for 1-2 minutes.
      👉 While the flatbread is cooking, continue rolling the remaining dough balls.
      Transfer the flatbread to a plate and continue with the remaining pieces. To keep them warm, cover with a clean kitchen towel or aluminum foil.

    Notes

    Note #1: Greek yogurt can be whole fat or reduced fat (2%).
    Note #2: Most Greek self raising flours have no added salt. American brands usually contain salt. Check the ingredients on the packaging and if your flour contains salt, omit the extra salt that the recipe calls for.
    Note #3:  If you don't have self raising flour, add 1.5 teaspoon baking powder for every cup (120 grams) of flour (this is 3 ¾ teaspoons baking powder for 2.5 cups/300 grams flour) 
    In Greece, pita bread for gyros is usually thicker. If you want to your flatbread like this, weight each piece of dough so that it will be 120 grams.

    Storage:

    Store any leftovers in an airtight container in the fridge for up to 5 days.

    Freezing:

    Freeze the flatbread in the freezer stacked in a zip lock bag (with parchment paper between each flatbread), and thaw when needed. You can briefly warm them in an air fryer, oven or skillet. If they seem dry, lightly spray with water before reheating.

    👨‍🍳  Expert Tips

    Resting: Don't skip the resting period! It does two main things: allows the flour to absorb all the moisture and relaxes the gluten so that the discs roll out easily.

    Rolling: when rolling out, keep the dough from sticking by sprinkling with flour and flipping the disc 1-2 times.

    Use a lid: putting the lid on while it cooks results in soft texture inside and crunchy outside without drying them out.

    With gluten-free flour:  For gluten free pita use a 1:1 GF flour plus baking powder if needed (see recipe note #3).

    Food pairings

    As a wrap with:

    • Grilled chicken or pork skewers with tzatziki, tomatoes, onions and oregano.
    • Crispy falafel, tahini sauce, cucumber, tomato, parsley and spices.
    • Scrambled eggs, feta cheese, spinach
    • Hummus and pack with shredded carrots, cucumbers, and bell peppers

    On the side with:

    • Greek lentil soup
    • Stews such as chicken and okra stew in tomato sauce (Bamya).

    💭 FAQs

    Is flat bread and pita bread the same?

    In Greece, pita is a bready, yeasty flatbread used to make gyros but you can also dip it in dips and sauces. The dough is rolled or stretched by hand and cooked in a skillet.
    Arabic pita is more common in the US, and it's a hollow and kind of crumbly flatbread in which you put stuff inside.
    Think of "flatbread" as the big family name, and "pita" as just one of the kids. Flatbread is the general word for any bread that is flat, like a tortilla or a pizza base. Pita is a special kind of flatbread that puffs up in the oven to create a hollow pocket inside. So, pita is a flatbread, but it has a unique pocket that other flatbreads do not have.

    Is this Greek yogurt flatbread healthy?

    Yes, Greek yogurt flatbread is generally a healthy alternative to traditional yeast flatbreads because it contains significantly more protein and requires no refined fats or sugar. Using whole wheat flour makes it significantly healthier because whole wheat contains the entire grain kernel, providing much more fiber than white flour to aid digestion. It also slows down digestion, preventing sudden blood sugar spikes and keeping you full longer. Moreover, it retains natural B vitamins, iron, magnesium, and antioxidants that are stripped away during white flour processing.
